Ingredients

Ingredients:

1/2 lb Thin sliced pork loin chops

9 Small red potatoes

1/2 Medium sweet onion (diced)

1 Medium artichoke

Curry powder

Thyme

Rosemary

Salt

Pepper

1 Table spoon brown sugar

2 Table spoons butter

1 Table spoon olive oil

1 Dark, rich, sweet, and full bodied beer

Recipe:

Artichoke

You need a pot and steam basket. Place basket in pot. Fill with water until it passes the basket slightly. Rinse and cut off the stem of the artichoke and any remaining thorns. Place in basket. Put the lid on and bring to a rapid boil. Reduce heat to a bubbling simmer and let steam for at least 30 minutes. When the leaves pull free easily you are done. People like to dip the leaves in any combination of lemon juice, mayonnaise and melted butter.

Roasted Red Potatoes

Preheat oven to 385 degrees. Get a roasting pan with lid or tin foil. Clean potatoes, cut any big ones down to size. Warm up 1 table spoon of butter, 1 tablespoon of olive oil, a sprinkle of rosemary, salt and pepper, potatoes and a hand full of diced onions while stirring on the stove. When butter is melted place roasting pan with lid on in the oven. Bake for 30-35 minutes. This thing will come out hot so allow time to cool and be careful.

Sweet Beer Curry Pork Chops

When everything else is close to ready start the chops. Place 1 table spoon butter, the other half of the sweet onion, and the pork chops in the frying pan. Bring to medium-high temperature and season with lots of curry powder, a little thyme, and some salt. When the onions start to soften splash 1/4 of the beer in the pan with a table spoon of brown sugar. Watch it closely now because the onions will caramelize, the chops will sear, and you will want it all off the heat before the sugar starts to burn.
